Bake delicious Sweet Chestnut cookies with your foraged sweet chestnut flour.
INGREDIENTS
120g Chestnut flour
85g buckwheat or plain flour
50g brown sugar
1 pinch of salt
110g butter (or alternative)
Tsp vanilla essence
2 tablespoons of milk or orange juice
Makes 12-15
METHOD
Pre-heat the oven to 175C.
Mix both flours into a large bowl and add the salt.
Add the cubed butter and rub in to make breadcrumbs.
Add the sugar, vanilla essence and the milk (or orange juice) and mix well to form a stiff, soft dough.
Portion into small balls of dough by rolling about a walnut sized piece between your palms and space them out on baking trays lined with baking parchment.
Using a fork, lightly press into the top of each cookie to imprint and flatten slightly.
Bake in the oven for 6-9 minutes or until the cookies are golden brown.
Place onto a cooling rack once you take them out of the oven and enjoy!
